Cada cop que faig aquest romesco, per a una calçotada o per acompanyar carns i verdures a la brasa, em demanen la recepta. El meu pare la feia sovint i el millor és que aguanta uns dies a la nevera.
- 3 nyores
- 2 Tomàquets escalivats
- 1 ceba escalivada
- 1 Cabessa d’alls escalivada
- 1 Pebrot escalivat
- 2 Alls crus
- 1 Molla de pà ben gran
- 1/2 got de Vinagre
- 1/2 litre d’oli suau
- 100 grs d’Ametlles torrades pelades i picades
- 100 grs d’Avellanes torrades pelades i picades
- Pebre vermell i sal
Pelem els tomàquets i el pebrot escalivats i ho posem a un recipient per a triturar amb el túrmix. Rasquem l’interior de les nyores evitant les llavors i ho afegim al got (jo ara compro les nyores móltes). Pelem la ceba i la cabessa d’alls escalivada i ho afegim. Afegim també els alls crus. A mida que anem afegint ingredients ho podem anar triturant per a que hi càpiga millor. Afegim les avellanes i les ametlles i la molla de pà amb el vinagre. Posem la sal i el pebre vermell al gust. Per últim anem afegint l’oli a poc a poc mentre anem triturant. Si queda massa espès se li pot afegir aigua.
